FlavorSum expands solutions portfolio with modulating flavour systems

USA – FlavorSum, a US-based flavour manufacturer, is introducing a new range of flavour solutions designed to modify taste characteristics in food and beverages.

The company’s latest offering, FlavorSum Modulate, includes flavours with modulating properties (FMPs) that help improve mouthfeel, reduce bitterness, and mask off-notes in various applications.

Food and beverage brands can integrate these solutions into reformulated or new products across multiple categories, including bakery, dairy, plant-based dairy, beverages, and cannabis-infused items.

FlavorSum’s director of flavour development R&D, Ibrahima Faye, said the growing demand for low-sugar and functional products makes it necessary to develop solutions that enhance taste while meeting labelling requirements.

The company has introduced three online resources focused on bitterness maskers, protein maskers, and sweetness optimisation, providing industry insights on the use of FMPs in protein-based and reduced-sugar formulations.

Chief commercial officer Dave Franz stated that FlavorSum Modulate enables the company’s team to fine-tune food and beverage taste profiles by working closely with customers.

In mid-2024, FlavorSum expanded its Kalamazoo, Michigan, facility by 35,000 square feet to enhance emulsion, extraction, and warehousing capacity.

The investment includes process automation upgrades to improve efficiency, quality, and safety at the site.

The company’s on-site innovation center pilot plant now features new ultra-high-temperature (UHT) and high-temperature short-time (HTST) processing capabilities to support its Dairy Center of Excellence.

FlavorSum operates two innovation centers in Kalamazoo, Michigan, and Mississauga, Ontario, and is in the process of launching a 10,000-square-foot center in Marlton, New Jersey.

The new facility will house an expanded flavour creation lab, analytical and application spaces, and the company’s Beverage Center of Excellence.

It will also offer pilot capabilities for carbonation, canning, tunnel pasteurisation, and hot filling, according to the company.
