The debut of VITESSENCE® Pea 100 HD was highlighted at the IFT FIRST Annual Event and Expo 2024 in Chicago, where it was showcased in a plant-based Chocolate Tahini Jelly protein bar.
Daniel Kennedy, the Director of Sales for Healthful Solutions and Protein Fortification, and Yeni Pena, the Senior Business Manager for Texture Solutions, led a presentation on the advancements in texture and sensory experiences, aiming to elevate consumer satisfaction.
Kennedy and Pena emphasized the new protein’s unique ability to minimize chalky textures while preserving softness, neutral flavor, and lower sugar content.
They contrasted this with traditional protein sources like soy and whey, which often lead to undesirable hardening and gritty textures over time.
VITESSENCE® Pea 100 HD is distinguished by its allergen-free profile, which contributes to a lower environmental impact by reducing the carbon footprint and blue water usage compared to whey isolate, according to HowGood metrics.
In rigorous shelf-life and sensory evaluations, this new pea protein outperformed six leading plant-based protein products in market tests.
With a minimum protein content of 84% on a dry basis, VITESSENCE® Pea 100 HD supports “good” or “excellent” source of protein claims.
Its advanced processing technology ensures consistent quality with minimal texture alterations, reducing the chalkiness often associated with proteins.
As a non-hydrolyzed option, it offers a cleaner label by minimizing bitterness and enhancing smoothness.
